Spicy Mexican Cuisine

Mexicans are very sociable people and a lot of that focuses on the kitchen – just ask Ugly Betty. Mexicans really love their food. There must be 1000s of Mexican restaurants in the US and most Americans clearly enjoy Mexican food Clearly, their culinary tastes have reached south of the border.

1. Chillies are ground into a paste for salsa in a molcjate. It comes in various variety of shapes.

2. Comal is a round and flat skillet that is used in order to blister the chillies which are perfect for making tortillas.

3. You can make Masa by grinding dried corn kernels and mixing with water. It becomes a dough that is flattened to make tortillas. You can stuff these with meat , fruits and spicy seasoning to make tamales.

4. Chillies are the common ingredient in most Mexican dishes. This results is the hot and spicy flavor of most Mexican foods. There are about 60 Chilli varieties that can be used in Mexican food. These can range from mild to extremely hot.

5. Jalapenos are the most widely used Mexican chillies. They can be served in small bowls and flavored with escabeche , onions and carrots.

6. A basic dish served as an appetizers Salsa is very popular. This is typically served as an accompaniment to the main course. You can make your salsas from either cooked or fresh vegetable. Most Mexican chefs have their own variation of salsa. No two salsas are ever the same as each chef tries to add hos own unique stamp to this classic. The basic ingredients of any salsa are chilies, onions, tomatoes and cilantro.

7. Tomatillos look like green tomatoes and they are related to tomatoes. They are great when used in sauces especially salsa verde and other green sauces.

8. Anchiote is another popular Mexican staple and this red paste is made from annatto seeds , lime juice , spices and vinegar. It is best served with , fish , chicken and pork.

9. Ceviche is made from raw fish marinated and flavored with lime juice. You can serve this with saltine crackers or crisps.

10. Guacamole is made from avocados which is a health fruit rich in fibre and healthy oils. Avocados are used as a garnish for most Mexican meals.

11. Cilantro

Is also more commonly knows as coriander in the rest of the world. It is a flavorful herb that spices up most spicy dishes. It has a green color and often enhances most Mexican dishes.

12. Carnitas is a popular pork dish simmered deep in fruit juices. You can either bake or fry these and serve them with tortillas or burritos. The range of options available for Mexican dishes is large and exciting and enough to challenge any gourmet cook.
